I love to cook Asian inspired recipes, especially if there are nice and spicy! Not only do they have great flavours but quite often they’re simple and straightforward. You may have to spend some extra time preparing the ingredients but on the whole, nothing to complicated.

A good example of how simple it can be can be seen in this Thai style recipe from Nigel Slater, Coconut chilli chicken. The preparation for this recipe is mainly to do with the sauce – blitzing the ginger, garlic and chillies in a blender. For extra flavour he also adds a few extra items including lime and coriander.

After that, it’s just a matter of frying off the chicken and adding the other ingredients. For me, what makes this dish is the coconut milk. It balances the flavours and stops the strong spices from taking over.

In the video below, Nigel takes us through the steps to prepare and cook the dish. If you are feeling adventurous, you could serve it with a naan bread. Otherwise, good quality rice like basmati would make a perfectly good accompaniment.
